  • Total Time

    40 minutes

Ingredients

  • 5 chicken thighs (bone-in, skin-on)

  • 2 teaspoons onion powder

  • 2 teaspoons garlic powder

  • 1 teaspoon thyme, washed and chopped

  • 2 tablespoons rosemary, washed and chopped

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • 1 red onion, peeled and sliced

  • 2 Honeycrisp apples, washed and sliced

  • 4 tablespoons salted butter

  • 3/4 cup apple cider

  • 1/2 cup chicken broth

  • 2 tablespoons Dijon mustard

  • 1 tablespoon sage, washed and chopped

  • 3-4 cloves garlic, peeled and diced

Directions

  1. Preheat oven to 425°F.
  2. Season chicken with onion powder, garlic powder, thyme, rosemary, salt, and pepper.
  3. Drizzle olive oil in an oven-safe pan over medium heat. Once hot, add the chicken and sear on both sides, about 3 minutes per side.
  4. Remove pan from the heat. Add red onion and apples. Bake in the oven for about 20-25 minutes, until chicken is thoroughly cooked with an internal temperature of 165°F.
  5. Remove pan from the oven. Place chicken and apples on a plate and set aside.
  6. Add butter, apple cider, chicken broth, Dijon mustard, garlic, and sage to the pan over medium-low heat. Stir occasionally until the sauce begins to thicken.
  7. Turn off stove and return chicken and apples to the pan, spooning sauce over chicken. Serve, and enjoy!
