Ingredients
5 chicken thighs (bone-in, skin-on)
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon thyme, washed and chopped
2 tablespoons rosemary, washed and chopped
Salt and pepper, to taste
2 tablespoons olive oil
1 red onion, peeled and sliced
2 Honeycrisp apples, washed and sliced
4 tablespoons salted butter
3/4 cup apple cider
1/2 cup chicken broth
2 tablespoons Dijon mustard
1 tablespoon sage, washed and chopped
3-4 cloves garlic, peeled and diced

Preheat oven to 425°F.

Season chicken with onion powder, garlic powder, thyme, rosemary, salt, and pepper.

Drizzle olive oil in an oven-safe pan over medium heat. Once hot, add the chicken and sear on both sides, about 3 minutes per side.

Remove pan from the heat. Add red onion and apples. Bake in the oven for about 20-25 minutes, until chicken is thoroughly cooked with an internal temperature of 165°F.

Remove pan from the oven. Place chicken and apples on a plate and set aside.

Add butter, apple cider, chicken broth, Dijon mustard, garlic, and sage to the pan over medium-low heat. Stir occasionally until the sauce begins to thicken.

Turn off stove and return chicken and apples to the pan, spooning sauce over chicken. Serve, and enjoy!
