Ingredients
4 ears of corn, shucked
1 bunch green onions, washed and chopped
1 cup cherry tomatoes, washed and halved
1 English cucumber, washed and chopped
1 bell pepper, cored and diced
1 avocado, peeled, pitted, and diced
Dressing
1 clove garlic, minced
2 limes, juiced
3 tablespoons olive oil
1/2 cup cilantro, washed and chopped
Salt and pepper, to taste

Preheat grill to medium-high heat. Add the corn cobs and turn often until cooked to the desired doneness with char marks. Remove from grill.

Whisk together lime juice, olive oil, garlic, chopped cilantro, salt and pepper.

Allow corn to cool, then shave kernels from the cob with a knife into a bowl. Mix in green onion, cherry tomatoes, cucumber, bell pepper, and avocado.

Stir in dressing to taste. Enjoy!
