Healthy Date Bites
Whether you’re craving a midday sweet or a healthy dessert, these date bites deliver—and all you need are four simple ingredients to make them!

Ingredients

  • 12 Medjool dates

  • 1/4 cup peanut butter or nut butter of your choice

  • 1/4 cup chopped nuts of your choice

  • 4 ounces chocolate chips of your choice

  • 1 teaspoon coconut oil

  • Flaky sea salt for garnish

Directions

  1. Slice dates lengthwise and remove pits. 
  2. Fill each date with nut butter (approx. 1 tsp per date) and crushed nuts, then set aside. 
  3. Combine chocolate and coconut oil in a microwave-safe bowl, and microwave in 30 second increments until melted and smooth.  
  4. Insert a toothpick into each stuffed date and dip it into the melted chocolate. If needed, use a spoon to fully coat.
  5. Let excess chocolate drip off and place on parchment-lined tray. 
  6. Top with the remaining crushed nuts and flaky sea salt. 
  7. Refrigerate until the chocolate is set. Enjoy!
