This fall-ready salad has a bit of everything: fresh greens, crisp apples, sweet grapes, tart cranberries, and creamy goat cheese. Whip it together in just 10 minutes and enjoy it as a side or main course.

Ingredients

Salad

  • 4 cups mixed greens, washed

  • 1 Honeycrisp apple, washed and sliced

  • 1 cup grapes, washed and cut in half

  • 1/3 cup crumbled goat cheese

  • 1/2 cup dried cranberries

  • 1/2 cup pecans, toasted

  • 1/4 cup olive oil

  • 1/4 cup apple cider vinegar

  • 1 shallot, peeled and finely chopped

  • tablespoon honey

  • tablespoon Dijon mustard

  • Salt and pepper, to taste

Directions

  1. Mix vinegar, shallot, honey, olive oil, Dijon mustard, salt, and pepper, whisking until emulsified.  
  2. Place greens in a large bowl and top with apples, grapes, goat cheese, dried cranberries, and pecans.  
  3. Add dressing to your preference, toss, and serve.
