Ingredients
4-5 medium sweet potatoes, washed, peeled, and cut into 1-inch rounds (about 2 lb)
2 olive oil
1/2 salt
Pepper to taste
1/2 cinnamon
3/4 low-sodium vegetable or chicken broth
2 unsalted butter
3 maple syrup or agave nectar
1 sage, washed and chopped
1 thyme, washed and chopped
1/2 chopped and cooked bacon
2 chopped pecans

Pre-heat the oven to 450°.

Toss sweet potatoes, oil, salt, pepper, and cinnamon in a large bowl. Arrange in a single layer on a baking sheet. Roast for about 25 minutes, flipping potatoes halfway through.

Pour broth over roasted sweet potatoes and cook until fork tender and most of the liquid is absorbed, about 25 minutes.

Melt butter in a pan over medium heat until brown, about 2 to 4 minutes. Lower to medium-low heat, add maple syrup and stir for 30 seconds. Remove from heat and add sage, thyme, pecans, and cooked bacon.

Spoon brown butter over cooked sweet potatoes. Enjoy!
