Radicchio Salad with Citrus Dressing

Ingredients

  • 2 heads radicchio, broken into individual leaves, washed

  • 1 large lemon, washed

  • 2 Dijon mustard

  • 1 honey

  • 1/4 extra-virgin olive oil

  • Salt and pepper, to taste

  • 1 1/2 mint leaves, washed

Directions

  1. Tear radicchio into bite-size pieces and soak in a bowl with ice water for about 30 minutes. Drain and pat dry.
  2. Remove peel and pith from lemon using a sharp knife. Quarter lemon lengthwise and discard the center membrane and seeds. Chop finely.
  3. Add chopped lemon to a large bowl, stir in Dijon mustard, honey, and oil until combined. Season with salt and pepper to taste.
  4. Toss radicchio and mint with dressing. Season with salt and pepper, if needed. Enjoy!
