Ingredients
Vinaigrette
1/3 cup extra-virgin olive oil
3 tablespoons lemon juice
1 teaspoon honey
1 tablespoon Dijon mustard
1 tablespoon diced shallots
1 clove garlic, minced
Salt and pepper, to taste
Salad
1 bunch Lacinato kale, washed, stems removed, and shredded
1 pound Brussels sprouts, washed and shaved
1/3 cup walnut halves, toasted
1/3 cup shaved parmesan
1/3 cup dried cranberries
Directions

Add the olive oil, lemon juice, honey, mustard, shallots, and garlic to a bowl and mix until combined. Add salt and pepper to taste.

Add kale and Brussels sprouts to a large bowl and pour dressing over the top. Massage kale and Brussels with your hands for 2-3 minutes.

Top with the walnuts, parmesan, and cranberries. Toss to combine. Enjoy!
