Shaved Brussels Sprouts & Kale Salad

Ingredients

Vinaigrette

  • 1/3 cup extra-virgin olive oil

  • 3 tablespoons lemon juice

  • 1 teaspoon honey

  • 1 tablespoon Dijon mustard

  • 1 tablespoon diced shallots

  • 1 clove garlic, minced

  • Salt and pepper, to taste

Salad

  • 1 bunch Lacinato kale, washed, stems removed, and shredded

  • 1 pound Brussels sprouts, washed and shaved

  • 1/3 cup walnut halves, toasted

  • 1/3 cup shaved parmesan

  • 1/3 cup dried cranberries

Directions

  1. Add the olive oil, lemon juice, honey, mustard, shallots, and garlic to a bowl and mix until combined. Add salt and pepper to taste.
  2. Add kale and Brussels sprouts to a large bowl and pour dressing over the top. Massage kale and Brussels with your hands for 2-3 minutes.
  3. Top with the walnuts, parmesan, and cranberries. Toss to combine. Enjoy!
