Ingredients
Dressing:
3 tablespoons lime juice
1 tablespoon fish sauce
1 tablespoon rice wine vinegar
2 teaspoons soy sauce
1 tablespoon minced shallot
1 teaspoon minced garlic
1 teaspoon granulated sugar
1/3 cup vegetable oil
Salad:
2 cups shredded rotisserie chicken
4 cups shredded savoy cabbage
1/2 cup shredded carrot
1/2 cup thinly sliced red bell pepper
1 serrano chile (cut crosswise into thin slices)
1/4 cup chopped cilantro
2 tablespoons chopped fresh mint
Kosher salt (to taste)
1/2 cup roasted peanuts chopped
Directions

In a small bowl, whisk together all dressing ingredients except oil. Slowy drizzle in oil while constantly whisking.

In a large bowl, combine chicken, cabbage, carrot, bell pepper, chile, and herbs. Drizzle with dressing and toss. Season with salt, to taste.

Garnish with peanuts and serve.
