Dos Hermanos has been a fixture in Portland's baking scene since 2018, when brothers Gabriel and Josue Azcorra took the baking skills they honed at another local baking institution and opened their own family bakery—specializing in everything from European classics to traditional Mexican delights.
With locations in Portland and Beaverton, Dos Hermanos has grown a lot over the years, but the Azcorras have always stayed true to their commitment to quality, community, and family.
We caught up with Josue to learn more about their bakery, their process, and what makes Dos Hermanos so special.
NSM: What makes Dos Hermanos unmistakably Dos Hermanos?
DH: Although the name means “two brothers,” and it initially referred to just Gabe and me (Josue), we now have more than 15 family members working across various departments of the bakery. At its core, what makes us who we are is family.
NSM: What inspired you to start Dos Hermanos, and what continues to drive your work today?
DH: We began by helping a local bakery on North Williams St. Just a few months later, we were presented with the opportunity to take over completely. So in 2018, Dos Hermanos was established. It started with Gabe and me, and then we brought on friends we had worked with for more than five years at our first job, Delphina’s. We like to say that our friends who have stayed with us over the years, along with our family, continue to drive the work we do.
NSM: How has being a family-run bakery shaped your business?
DH: Working with family allows us to understand everyone’s unique strengths. Some of us are great at customer service or creating marketing materials, while others focus entirely on baking and production. Gabe is strong in management and logistics, while I really enjoy developing new recipes and products. It is a true blessing and privilege to work alongside our family every day.
NSM: What is it like partnering with New Seasons?
DH: We have been partnering with New Seasons for many years, beginning shortly after we started Dos Hermanos. We love telling our friends, family, and customers that our products are sold at local New Seasons Markets. It is always a proud moment to take visiting family members into a store so they can see firsthand how far our business has come. We like to think of our business as one family supporting other families, both inside and outside the bakery—and we do this through our products and the support of partners like New Seasons.
