Ingredients
1/2 cup jarred pimentos, well-drained
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon green onion, rinsed and minced
1 1/2 teaspoons Tabasco sauce
1/2 teaspoon dried thyme
1 cup shredded medium cheddar cheese
1 cup shredded white cheddar cheese
Directions

Dice half of the pimentos and set aside in a medium bowl.

In a food processor, puree the remaining pimentos with mayonnaise, sour cream, green onion, Tabasco, and thyme. Purée until smooth.

Add shredded cheese and mayonnaise mixture to reserved diced pimentos. Mix until thoroughly combined. Taste and adjust seasoning with salt and pepper. Use on sandwiches, or as a dip with potato chips, crackers, or crudités.
